Coconut Ice Cream...from my Aunt Nanny

(I was too busy eating this to take a pic, but I strongly believe in pics accompanying recipes so this one is courtesy of the internet)

1 1/2 pints heavy whipping cream

20 oz crushed pineapple (next time I'm giving it a few pulses in my food processor to make the texture more subtle)

1 TB coconut extract

6 cups whole milk

1 1/2 cups sugar

1/2 cup flaked coconut

1/8 tsp salt

Mix together and freeze in 1 gallon freezer!
